Vandy Cooks: ‘Delicious Dishes from Thailand’ May 18

Delicious dishes from Thailand will be featured when the Vanderbilt Recreation and Wellness Center and Health Plus present Vandy Cooks May 18.

Take a trip to the “Jewel of the Orient” with registered dietitians Marissa Wertheimer and Marilyn Holmes and Certified Health Education Specialist and Health Educator Emily Cox. At this Vandy Cooks, dishes from Thailand will be served.

Shrimp spring rolls

Influences from as early as the 1351 C.E. have shaped the dishes we enjoy today all around the world. Thai cooking places an emphasis on lightly prepared dishes with strong aromatic and spicy ingredients. Recipes prepared will include red curry soup, green curry chicken and shrimp spring rolls. Recipes, complete with nutrition analysis, will be available for all attending this Vandy Cooks

Wertheimer is a registered dietitian and health educator for Health Plus.In her role she provides wellness coaching along with health education to Vanderbilt faculty and staff. Holmes has more than 40 years of experience as a registered dietitian and in population health management. Currently, she is an associate director of the Vanderbilt Recreation and Wellness Center. Cox is a certified health education specialist and health educator for Health Plus. In her role she provides nutrition programming and general health education to Vanderbilt faculty and staff.

Vandy Cooks is provided monthly through a partnership with the Vanderbilt Recreation and Wellness Center, Health Plus, and their many celebrated food experts.
