Employee Appreciation: Vandy’s Cookin’ on Sept. 23

Vanderbilt Employee Appreciation invites you to attend a series of Zoom webinars to learn recipes geared toward employees working remotely and preparing food at home. Vandy’s Cookin’ will take place on four consecutive Wednesdays, Sept. 9, 16, 23 and 30, from 3:30 to 4 p.m. each day.

The recipes on Wednesday, Sept. 23, will be presented by Aaron Dilts, executive chef for Vanderbilt Campus Dining. Check out the menu and list of ingredients to cook along with us.

Sept. 23 – A Taste of India

Aloo Tikki Cakes

  • 1 medium potato
  • 2 cups water
  • ½ tsp. salt
  • 2 tbs. minced red onion
  • 1 tbs. chopped cilantro
  • 2 tbs. diced green chilies
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ½ tsp. garam masala

Curried Cauliflower

  • ½ head of cauliflower
  • ¼ cup olive oil
  • ½ tsp. turmeric
  • ½ tsp. curry powder
  • ¼ tsp. black pepper
  • ¼ tsp. salt
