Vandy Cooks: ‘Dishes from Costa Rica’ Feb. 7Jan. 31, 2018, 8:24 PM
Join Marilyn Holmes as she shares dishes prepared and served by Chef Rubén Villegas of the Finca Rosa Blanca Coffee Plantation Resort in Santa Barbara de Heredia, Costa Rica. Recipes will include Blackened Sesame Seed Tuna, Mushroom Risotto and Romanesque Broccoli.
The free cooking demonstration will be held Wednesday, Feb. 7, from 5:30 to 6:30 p.m. at the Vanderbilt Recreation and Wellness Center demonstration kitchen. Attendees will receive samples of the foods prepared as well as their recipes.
Holmes has more than 40 years of experience as a registered dietitian and in population health management. Currently she serves as associate director of the Vanderbilt Recreation and Wellness Center. She has traveled extensively throughout the world and finds Costa Rican foods to be special because of their inclusion of fresh local ingredients.
