The Vanderbilt Recreation and Wellness Center and Health Plus will present “Vandy Cooks with Chef Aaron Dilts” from noon to 1 p.m. Friday, Jan. 22, at the VRWC demonstration kitchen.

Join us at the VRWC as we celebrate healthy eating at Vanderbilt by launching the third year of Vandy Cooks. During this kickoff event, Aaron Dilts, chef at The Martha Rivers Ingram Commons, will prepare Mahi Mahi with Mango Salsa and Coconut Rice. This recipe is one you will want to serve again and again in 2016. Food samples will be provided along with recipe cards with complete nutrition analysis.

Among his many accomplishments, Dilts, along with Chef John Kelly, proudly represented Vanderbilt University at the 2013 American Culinary Federation’s National Collegiate Dining Challenge, designed to celebrate the work of university chefs and their food service teams. They received the Bronze Medal, a testament to their leadership in the food industry; their commitment to creativity, health and nutrition; and their focus on local foods, market trends, technology and sustainability.
