Vandy Cooks: ‘Healthy Holiday Dishes from Around the World’

Health Plus’ Melinda Jones and the Vanderbilt Recreation and Wellness Center’s Marilyn Holmes will present “Healthy Holiday Dishes from Around the World” from noon to 1 p.m. Friday, Dec. 12, at the VRWC’s demonstration kitchen.

Jones and Holmes, both registered dieticians, will create holiday dishes from a variety of traditions around the globe, including the United States, Croatia, Asia and the Middle East.

Learn tips on how to plan, coordinate, prepare and serve a holiday meal with ease, from appetizers to dessert. Taste dishes seasoned with herbs, spices and more. Samples of all of the prepared dishes will be served and their recipes made available to take home.

Jones is activities coordinator for Health Plus. Her duties include incorporating nutrition information into programming for Vanderbilt faculty and staff in a way that is practical, interactive and evidence-based. She is trained in motivational interviewing and wellness coaching and is passionate about helping others make healthy lifetime changes. Jones, who has a farming background, also writes a monthly nutrition column for an agriculture newspaper.

Holmes has more than 30 years of experience as a registered dietitian and in population health management. Her diverse professional background includes experience in hospitals, at an educational institution, in nursing homes and in the public health sector at the local, regional and state level. She currently serves as associate director of the Vanderbilt Recreation and Wellness Center and has appeared on television, presented to groups, and authored or co-authored publications on a variety of health topics.

The Vanderbilt Recreation and Wellness Center serves Vanderbilt faculty, staff, students and the Nashville community.
