Join registered dietitian Karman Meyer as she inspires us to eat healthy with lean beef, an excellent source of protein, omega-3 fatty acids, vitamin B12, niacin, zinc and iron. This Vandy Cooks is Friday, July 28, from noon to 1 p.m. at the Vanderbilt Recreation and Wellness Center.

Enjoy observing Meyer, a regular contributor to Food and Nutrition magazine, as she creates the first tasty dish. Attendees will then go hands-on for the second recipe using rice paper to make beef spring rolls.

Meyer is a registered dietitian and nutritionist based in Nashville, as well as director of communications for the Tennessee Beef Industry Council. Teaching people easy ways to implement healthy changes into their lifestyles is her passion. Meyer is an experienced recipe developer, nutrition writer and public speaker, and has worked in the food industry for more than 10 years.

Vandy Cooks is provided monthly through a partnership with the Vanderbilt Recreation and Wellness Center and Health Plus to support healthy eating through cooking presentations featuring the many aspects of food preparation.
