Vandy Cooks April 15: Cooking with ancient grains

Vanderbilt chefs Brian Hancock and Austin Irvin will create masterful dishes using ancient grains for the April edition of Vandy Cooks. The event is scheduled from noon to 1 p.m. Friday, April 15, at the Vanderbilt Recreation and Wellness Center demonstration kitchen.

Learn ways to prepare delicious whole grains, some of which are ancient but reappearing on grocery store shelves and add nutritious variety to the modern diet.

Hancock currently oversees the Department of Athletics’ Training Table, which feeds hundreds of Vanderbilt student-athletes each day. He is a self-taught chef with a passion for simple, proper cooking. He began his culinary career more than 20 years ago in a small town in rural Georgia. After working at Georgia Southern University for nine years, he moved to Nashville to serve as head chef of Vanderbilt’s Training Table.

Irvin, a sous chef with Vanderbilt Campus Dining, is new to the university and currently oversees Campus Dining’s specialty dining section.
