Vandy Cooks: ‘Clean Up Your Game Day Eating’ Aug. 21

The Vanderbilt Recreation and Wellness Center and Health Plus present “Clean Up Your Game Day Eating with Executive Chef Lucius Carroll,” scheduled from noon to 1 p.m. Friday, Aug. 21, at the VRWC Demonstration Kitchen.

Join Carroll as he creates recipes for game day parties using “clean” foods in a combination that will score points with all your friends and family. Dishes prepared will include ingredients that are as close to their natural form as possible while avoiding preservatives and processed foods. Receive free samples and recipes.

Carroll, a native Nashvillian and culinary arts graduate of Johnson and Wales University in Providence, Rhode Island, previously worked for Marriott Hotels and Resorts in Boston and Atlanta. He was a member of the Gaylord Opryland Hotel’s Grand Reopening Team after the Nashville flood of 2010 and worked with the Sodexo Senior Living Team prior to joining Sodexo’s health care division and the Monroe Carell Jr. Children’s Hospital at Vanderbilt.

Carroll enjoys travel, live music events and the outdoors and is the proud father of college-aged twin daughters.
